Cooling Summertime Smoothie


News flash: it's hot outside, real hot. So hot, in fact, that we were inspired to throw the most cooling ingredients we could think of in the blender for a smoothie that's guaranteed to take your core temp down a degree or two. Cucumbers, two types of melons and mint come together to create an amazingly refreshing summertime snack. We also tossed in a handful of spinach (we can't help ourselves) to balance out some of the fruit sugars; with the watermelon and cantelope flavors you won't be able to taste the greens - dare we say it's even kid friendly? 

If you're sensitive to food combining principles you may choose to pair this smoothie with a few of your favorite nuts or a raw protein snack. We think this blend could also make an awesome base for some homemade frozen fruit bars - can you get much cooler than that?

INGREDIENTS
Makes 1 smoothie

  • 1/2 cup watermelon
  • 1/2 cup cantalope (throw the seeds in, too! They help lend a creaminess to this non-dairy smoothie)
  • 1/2 cucumber, peeled
  • Small handful of spinach
  • 2-3 mint leaves
Place all ingredients in blender and pulse blend until mixture achieves desired consistency. For frozen fruit bars, leaving a little texture in the mix or adding in a handful of chopped melon would be spot on.
